These little bad boys got a lot of lovin’ on my Instagram account, with a ton of requests for the recipe. The funny thing is, they sound disgusting, but in theory, they’re brilliant. Here’s why: I have a daughter that has sensory sensitivities and tactile aversions. Feeding has been an uphill battle since birth. Bottle feeds were torture because she had severe gastrointestinal reflux disease and everything burned on the way down, which means she screamed and cried every.single.time. It was heartbreaking. As she grew and developed into a toddler, she favored dry crunchy textures. Translation: carbs! I tried every which way to sneak healthy food into her diet, disguising it inside other foods, to no avail. Until I stumbled upon a recipe for healthy muffins. I tested out the recipe and ended up tweaking it a bit to add more flavor to mask the healthy ingredients. Result: my twins LOVED them!

After making the original recipe, I decided to get a little daring and test out throwing more veggies into the batter. I have included that recipe as well, see Mom Win Muffins, Part 2. I would start out with the first recipe and see how your kids respond to the taste.

Tip: don’t make these muffins with your kids. If they see the green batter, they will be turned off and the deception will backfire!

Tip 2: I love this little scooper and this muffin tin. It provides the perfect amount of batter for each mini muffin.

Mom Win Muffins

Ingredients
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1-2 tbs vanilla
  • 1/2 cup honey
  • 1/2 cup Greek yogurt
  • 1 banana
  • 1 avocado
  • 2 cups spinach
  • 1 cup chocolate chips
Directions
  • Step 1 Preheat oven to 350 degrees.
  • Step 2 Line muffin tins.
  • Step 3 Mix flour, baking powder, and cocoa powder in a bowl and set aside.
  • Step 4 Mix remaining ingredients (except chocolate chips) in a blender or food processor.
  • Step 5 Combine the wet and dry ingredients and add in chocolate chips.
  • Step 6 Scoop into mini muffin tins.
  • Step 7 Bake for 10-12 minutes.

  • 2 cups flour (can use 1 cup of whole wheat and 1 cup of regular)
  • 2 tsp baking powder
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1-2 tbs vanilla
  • 1/2 cup honey
  • 1/2 cup applesauce
  • 1/2 cup canola oil
  • 1 banana
  • 1 avocado
  • 1/2 cup chopped cauliflower/broccoli/carrots
  • 1 cup chocolate chips
Directions
  • Step 1 Preheat oven to 350 degrees.
  • Step 2 Line mini muffin tins.
  • Step 3 Mix flour, baking powder, and cocoa powder in a bowl and set aside.
  • Step 4 Mix remaining ingredients (except chocolate chips) in a blender or food processor until smooth.
  • Step 5 Combine the wet and dry ingredients and add in chocolate chips.
  • Step 6 Scoop into muffin tins.
  • Step 7 Bake for 10-12 minutes at 350 degrees.
